Ingredients

  • 3 medium (400g) Zucchini, grated and squeezed dry
  • 2 large Eggs
  • 1/4 cup (28g) Almond flour
  • 1/2 cup (75g) Feta cheese, crumbled
  • 3 tbsp Fresh dill, chopped
  • 3 tbsp Fresh parsley, chopped
  • 3 tbsp Olive oil for frying
  • to taste Salt and pepper

Method

  1. Grate zucchini, salt generously, and let sit 10 minutes. Squeeze out all excess moisture.
  2. Mix zucchini with eggs, almond flour, feta, dill, parsley, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Drop spoonfuls of batter into the pan and flatten slightly.
  5. Fry 3-4 minutes per side until golden brown and crispy.
  6. Drain on paper towels and serve with yogurt on the side.
