Ingredients
- 3 medium (400g) Zucchini, grated and squeezed dry
- 2 large Eggs
- 1/4 cup (28g) Almond flour
- 1/2 cup (75g) Feta cheese, crumbled
- 3 tbsp Fresh dill, chopped
- 3 tbsp Fresh parsley, chopped
- 3 tbsp Olive oil for frying
- to taste Salt and pepper
Method
- Grate zucchini, salt generously, and let sit 10 minutes. Squeeze out all excess moisture.
- Mix zucchini with eggs, almond flour, feta, dill, parsley, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Drop spoonfuls of batter into the pan and flatten slightly.
- Fry 3-4 minutes per side until golden brown and crispy.
- Drain on paper towels and serve with yogurt on the side.
