Ingredients

  • 1 lb (450g) Large shrimp, peeled
  • 3 medium Tomatoes, diced
  • 4 cloves Garlic, minced
  • 1 Green pepper, diced
  • 2 tbsp Butter
  • 1/2 cup shredded Kashar or mozzarella cheese
  • 1 tsp each Red pepper flakes, oregano
  • to taste Salt and pepper

Method

  1. Preheat oven to 400°F (200°C).
  2. Sauté garlic and peppers in butter for 2 minutes.
  3. Add tomatoes and cook 5 minutes until saucy.
  4. Season with red pepper flakes, oregano, salt, and pepper.
  5. Add shrimp and cook 2 minutes per side.
  6. Transfer to an oven-safe dish, top with cheese.
  7. Bake 8-10 minutes until cheese is bubbly and golden.
