Ingredients
- 2 cups Heavy cream
- 4 oz (112g) Cream cheese
- 2 tbsp Coconut flour
- 1/2 cup Erythritol
- 1 tsp Vanilla extract
- 2 tbsp Butter
- for topping Ground cinnamon
Method
- Heat heavy cream with erythritol in a saucepan until warm.
- Whisk in coconut flour and cream cheese until smooth. Cook 10 minutes, stirring constantly.
- Add vanilla extract. The mixture should coat the back of a spoon.
- Pour into a buttered oven-safe dish.
- Broil on high for 3-5 minutes until the top is deeply caramelized.
- Cool, then refrigerate at least 3 hours.
- Cut into rectangles, roll up, and dust with cinnamon.
