Ingredients

  • 2 cups (224g) Almond flour
  • 1/2 cup (113g) Butter, softened
  • 1/3 cup Erythritol, powdered
  • 1 tsp Vanilla extract
  • 1 large Egg yolk
  • 1/4 tsp Salt

Method

  1. Preheat oven to 325°F (165°C).
  2. Cream butter with powdered erythritol until fluffy.
  3. Add egg yolk and vanilla. Mix well.
  4. Fold in almond flour and salt until a soft dough forms.
  5. Shape into crescents or rounds. Place on a lined baking sheet.
  6. Bake 10-12 minutes until edges are barely golden.
  7. Cool completely on the tray—they firm up as they cool.
