Ingredients

  • 4 lbs (1.8kg) Lamb shoulder, bone-in
  • 6 cloves Garlic, slivered
  • 3 tbsp Butter
  • 1 tbsp Cumin
  • 1 tbsp Paprika
  • 1 tbsp Oregano
  • to taste Salt and pepper
  • 1 cup Water or broth

Method

  1. Preheat oven to 325°F (160°C).
  2. Cut small slits all over the lamb and insert garlic slivers.
  3. Rub lamb with softened butter, cumin, paprika, oregano, salt, and pepper.
  4. Place in a roasting pan with water. Cover tightly with foil.
  5. Roast for 4 hours, basting occasionally, until meat falls off the bone.
  6. Uncover for the last 30 minutes to brown the top.
  7. Rest 15 minutes before pulling the meat apart. Serve with pan juices.
