Ingredients
- 4 lbs (1.8kg) Lamb shoulder, bone-in
- 6 cloves Garlic, slivered
- 3 tbsp Butter
- 1 tbsp Cumin
- 1 tbsp Paprika
- 1 tbsp Oregano
- to taste Salt and pepper
- 1 cup Water or broth
Method
- Preheat oven to 325°F (160°C).
- Cut small slits all over the lamb and insert garlic slivers.
- Rub lamb with softened butter, cumin, paprika, oregano, salt, and pepper.
- Place in a roasting pan with water. Cover tightly with foil.
- Roast for 4 hours, basting occasionally, until meat falls off the bone.
- Uncover for the last 30 minutes to brown the top.
- Rest 15 minutes before pulling the meat apart. Serve with pan juices.
