Ingredients

  • 4 large Eggs
  • 2 medium Tomatoes, diced
  • 1 medium Green pepper, diced
  • 2 tbsp Butter
  • 1 tsp Red pepper flakes
  • to taste Salt and black pepper

Method

  1. Melt butter in a skillet over medium heat.
  2. Add diced peppers and sauté for 3 minutes until softened.
  3. Add tomatoes and cook for 5 minutes until they break down and release juices.
  4. Season with red pepper flakes, salt, and black pepper.
  5. Crack eggs directly into the pan and gently stir until just set, about 3-4 minutes.
  6. Serve immediately in the pan with a sprinkle of extra red pepper flakes.
