  • 50g White cheese (feta-style), crumbled
  • 1 tbsp Olive oil
  • 1 tbsp Parsley, chopped
  • to taste Salt and pepper

Method

  1. Beat the eggs and season with salt and pepper.
  2. Heat olive oil in a pan.
  3. Pour in the egg mixture, cook on low heat.
  4. When half cooked, sprinkle with white cheese and parsley.
  5. Fold in half, cook for 1 more minute and serve.
