Ingredients

  • 2 cups (224g) Almond flour
  • 2 tbsp Coconut flour
  • 4 large Eggs
  • 1/3 cup Butter, melted
  • 3/4 cup Erythritol
  • 1.5 tsp Baking powder
  • 1 lemon Lemon zest
  • 1/2 cup each Sugar-free syrup: erythritol + water + lemon juice

Method

  1. Preheat oven to 350°F (175°C). Grease a 9-inch baking pan.
  2. Whisk eggs with erythritol until fluffy. Add melted butter.
  3. Fold in almond flour, coconut flour, baking powder, and lemon zest.
  4. Pour into pan and bake 25-30 minutes until golden.
  5. Make syrup: dissolve erythritol in water over heat, add lemon juice. Cool slightly.
  6. Pour warm syrup over the warm cake. Let it absorb for 30 minutes.
  7. Cut into diamond shapes and serve.
