Ingredients
- 2 cups (224g) Almond flour
- 2 tbsp Coconut flour
- 4 large Eggs
- 1/3 cup Butter, melted
- 3/4 cup Erythritol
- 1.5 tsp Baking powder
- 1 lemon Lemon zest
- 1/2 cup each Sugar-free syrup: erythritol + water + lemon juice
Method
- Preheat oven to 350°F (175°C). Grease a 9-inch baking pan.
- Whisk eggs with erythritol until fluffy. Add melted butter.
- Fold in almond flour, coconut flour, baking powder, and lemon zest.
- Pour into pan and bake 25-30 minutes until golden.
- Make syrup: dissolve erythritol in water over heat, add lemon juice. Cool slightly.
- Pour warm syrup over the warm cake. Let it absorb for 30 minutes.
- Cut into diamond shapes and serve.
