Ingredients
- 1 cup, finely processed Cauliflower rice
- 1 can (400ml) Full-fat coconut milk
- 1 cup Heavy cream
- 1/2 cup Erythritol
- 3 large Egg yolks
- 1 tsp Vanilla extract
- for topping Ground cinnamon
Method
- Cook cauliflower rice in coconut milk over medium heat for 15 minutes until very soft.
- Add heavy cream and erythritol. Stir and cook another 5 minutes.
- Temper egg yolks: whisk yolks, add a ladle of hot mixture slowly while whisking.
- Pour yolk mixture back into the pot. Cook on low, stirring, for 5 minutes until thickened.
- Stir in vanilla. Divide among ramekins.
- Broil for 2-3 minutes until tops are golden (optional).
- Chill for 2 hours. Dust with cinnamon before serving.
