Ingredients

  • 1 cup, finely processed Cauliflower rice
  • 1 can (400ml) Full-fat coconut milk
  • 1 cup Heavy cream
  • 1/2 cup Erythritol
  • 3 large Egg yolks
  • 1 tsp Vanilla extract
  • for topping Ground cinnamon

Method

  1. Cook cauliflower rice in coconut milk over medium heat for 15 minutes until very soft.
  2. Add heavy cream and erythritol. Stir and cook another 5 minutes.
  3. Temper egg yolks: whisk yolks, add a ladle of hot mixture slowly while whisking.
  4. Pour yolk mixture back into the pot. Cook on low, stirring, for 5 minutes until thickened.
  5. Stir in vanilla. Divide among ramekins.
  6. Broil for 2-3 minutes until tops are golden (optional).
  7. Chill for 2 hours. Dust with cinnamon before serving.
