Ingredients

  • 2 cups Cauliflower, riced
  • 1/2 cup Walnuts, finely chopped
  • 1 cup Mushrooms, finely diced
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 3 tbsp Tahini
  • 2 tbsp Lemon juice
  • 8 large Lettuce leaves
  • 2 tbsp Olive oil
  • to taste Salt and pepper

Method

  1. Sauté mushrooms in olive oil until golden, about 5 minutes.
  2. Add riced cauliflower, walnuts, cumin, paprika, and garlic powder. Cook 8-10 minutes.
  3. Season generously with salt and pepper.
  4. Mix tahini with lemon juice and a splash of water for the sauce.
  5. Spoon filling into lettuce wraps, drizzle with tahini sauce.
