Ingredients
- 2 cups Cauliflower, riced
- 1/2 cup Walnuts, finely chopped
- 1 cup Mushrooms, finely diced
- 1 tsp Cumin
- 1 tsp Paprika
- 1 tsp Garlic powder
- 3 tbsp Tahini
- 2 tbsp Lemon juice
- 8 large Lettuce leaves
- 2 tbsp Olive oil
- to taste Salt and pepper
Method
- Sauté mushrooms in olive oil until golden, about 5 minutes.
- Add riced cauliflower, walnuts, cumin, paprika, and garlic powder. Cook 8-10 minutes.
- Season generously with salt and pepper.
- Mix tahini with lemon juice and a splash of water for the sauce.
- Spoon filling into lettuce wraps, drizzle with tahini sauce.
