Ingredients

  • 1 medium Zucchini, sliced
  • 1 cup Green beans, trimmed
  • 1 small Tomato, diced
  • 2 tbsp Extra virgin olive oil
  • 1/4 small Onion, diced
  • 4 tbsp Full-fat yogurt
  • 1 clove Garlic, minced
  • to taste Salt and pepper

Method

  1. Heat olive oil in a pot over medium heat.
  2. Saute onion until soft, about 2 minutes.
  3. Add zucchini and green beans, stir for 3 minutes.
  4. Add diced tomato, salt, pepper, and 1/4 cup water.
  5. Cover and simmer on low for 15 minutes until vegetables are tender.
  6. Let cool to room temperature.
  7. Mix yogurt with garlic and salt.
  8. Serve vegetables with garlic yogurt on the side.
