Ingredients
- 1 medium Zucchini, sliced
- 1 cup Green beans, trimmed
- 1 small Tomato, diced
- 2 tbsp Extra virgin olive oil
- 1/4 small Onion, diced
- 4 tbsp Full-fat yogurt
- 1 clove Garlic, minced
- to taste Salt and pepper
Method
- Heat olive oil in a pot over medium heat.
- Saute onion until soft, about 2 minutes.
- Add zucchini and green beans, stir for 3 minutes.
- Add diced tomato, salt, pepper, and 1/4 cup water.
- Cover and simmer on low for 15 minutes until vegetables are tender.
- Let cool to room temperature.
- Mix yogurt with garlic and salt.
- Serve vegetables with garlic yogurt on the side.
