Ingredients
- 1 medium Zucchini
- 1 small Eggplant
- 1 piece(s) Red bell pepper
- 2 tbsp Olive oil
- 3 tbsp Tahini
- 1 tbsp Lemon juice
- 1/2 tsp Cumin
- to taste Salt
Method
- Preheat oven to 200°C (400°F).
- Cut vegetables into cubes and toss with olive oil, cumin and salt.
- Spread on a baking sheet and roast for 25-30 minutes until caramelized.
- Make the sauce by mixing tahini, lemon juice and 2 tbsp water.
- Drizzle tahini sauce over the roasted vegetables and serve.
