Ingredients

  • 1 medium Zucchini
  • 1 small Eggplant
  • 1 piece(s) Red bell pepper
  • 2 tbsp Olive oil
  • 3 tbsp Tahini
  • 1 tbsp Lemon juice
  • 1/2 tsp Cumin
  • to taste Salt

Method

  1. Preheat oven to 200°C (400°F).
  2. Cut vegetables into cubes and toss with olive oil, cumin and salt.
  3. Spread on a baking sheet and roast for 25-30 minutes until caramelized.
  4. Make the sauce by mixing tahini, lemon juice and 2 tbsp water.
  5. Drizzle tahini sauce over the roasted vegetables and serve.
