Ingredients

  • 1 kg (2.2 lbs) Beef stew meat (chuck), cubed
  • 2 large (300g) Yellow onion, chopped
  • 1 clove Garlic, minced
  • 3 tbsp (45g) Butter, cubed
  • 1.5 cups (350 ml) Hot water
  • to taste Salt
  • to taste Black pepper
  • 1/2 tsp Red pepper flakes

Method

  1. Add the beef cubes to a heavy-bottomed pot. Do not rinse the meat — washing dilutes flavor.
  2. Top the meat with the chopped onion, minced garlic, and butter cubes.
  3. Pour the hot water over everything. Do not stir.
  4. Cover, bring to a low simmer over medium heat, then reduce heat to low.
  5. Braise for at least 2 hours, lid on, undisturbed. Resist the urge to stir — the beef cooks gently in its own rendered juices.
  6. Once the beef is fork-tender and the liquid has reduced into a glossy sauce, season with salt, black pepper, and red pepper flakes.
  7. Serve hot with greens or cauliflower rice.
