Ingredients
- 1 kg (2.2 lbs) Beef stew meat (chuck), cubed
- 2 large (300g) Yellow onion, chopped
- 1 clove Garlic, minced
- 3 tbsp (45g) Butter, cubed
- 1.5 cups (350 ml) Hot water
- to taste Salt
- to taste Black pepper
- 1/2 tsp Red pepper flakes
Method
- Add the beef cubes to a heavy-bottomed pot. Do not rinse the meat — washing dilutes flavor.
- Top the meat with the chopped onion, minced garlic, and butter cubes.
- Pour the hot water over everything. Do not stir.
- Cover, bring to a low simmer over medium heat, then reduce heat to low.
- Braise for at least 2 hours, lid on, undisturbed. Resist the urge to stir — the beef cooks gently in its own rendered juices.
- Once the beef is fork-tender and the liquid has reduced into a glossy sauce, season with salt, black pepper, and red pepper flakes.
- Serve hot with greens or cauliflower rice.
