Ingredients
- 4 Large eggs
- 2 medium Tomatoes, diced
- 1 Green pepper, diced
- 2 tbsp Butter or olive oil
- 1 tsp Aleppo pepper flakes
- to taste Salt and pepper
Method
- Heat butter in a skillet over medium heat.
- Sauté green pepper 2 minutes, add tomatoes and cook until softened.
- Season with Aleppo pepper, salt and pepper.
- Crack eggs into the pan, gently stir to create soft curds.
- Remove from heat while still slightly wet—they'll continue cooking. Serve immediately.
