Ingredients

  • 4 Large eggs
  • 2 medium Tomatoes, diced
  • 1 Green pepper, diced
  • 2 tbsp Butter or olive oil
  • 1 tsp Aleppo pepper flakes
  • to taste Salt and pepper

Method

  1. Heat butter in a skillet over medium heat.
  2. Sauté green pepper 2 minutes, add tomatoes and cook until softened.
  3. Season with Aleppo pepper, salt and pepper.
  4. Crack eggs into the pan, gently stir to create soft curds.
  5. Remove from heat while still slightly wet—they'll continue cooking. Serve immediately.
