Ingredients

  • 200 g broccoli
  • 1 small onion
  • 3 cloves garlic
  • 1 (juiced) lemon
  • 2 tbsp olive oil
  • 2 pieces red pepper

Method

  1. Heat 2 tbsp of olive oil in a large pot over medium heat for about 2 minutes until shimmering.
  2. Add the red pepper pieces to the pot and sauté for 5 minutes until softened, stirring occasionally.
  3. Add the 200 g of broccoli to the pot, stir to coat with the oil, and cook for 3 minutes until the broccoli begins to brighten in color.
  4. Pour in enough water to fully submerge the vegetables, bring to a boil, then reduce the heat and simmer for 35 minutes until the broccoli is completely tender.
  5. Remove the pot from heat and use an immersion blender to blend the soup until smooth and creamy, a technique common in Turkish çorba preparation.
  6. Stir in the juice of 1 lemon and season to taste, then allow the soup to rest for 4 minutes before ladling into bowls.
