Ingredients
- 200 g broccoli
- 1 small onion
- 3 cloves garlic
- 1 (juiced) lemon
- 2 tbsp olive oil
- 2 pieces red pepper
Method
- Heat 2 tbsp of olive oil in a large pot over medium heat for about 2 minutes until shimmering.
- Add the red pepper pieces to the pot and sauté for 5 minutes until softened, stirring occasionally.
- Add the 200 g of broccoli to the pot, stir to coat with the oil, and cook for 3 minutes until the broccoli begins to brighten in color.
- Pour in enough water to fully submerge the vegetables, bring to a boil, then reduce the heat and simmer for 35 minutes until the broccoli is completely tender.
- Remove the pot from heat and use an immersion blender to blend the soup until smooth and creamy, a technique common in Turkish çorba preparation.
- Stir in the juice of 1 lemon and season to taste, then allow the soup to rest for 4 minutes before ladling into bowls.
