Ingredients
- 200 g zucchini
- 80 g walnut cheese
- 4 pieces eggs
- 1 tbsp dill
- 1 small scallions
Method
- Grate the zucchini coarsely, then squeeze out as much moisture as possible using a clean kitchen towel or your hands.
- In a large mixing bowl, combine the grated zucchini, crumbled walnut cheese, eggs, chopped dill, and finely sliced scallions, stirring until a cohesive batter forms.
- Heat a non-stick skillet over medium heat and lightly grease the surface, then drop heaped spoonfuls of the batter into the pan, gently flattening each fritter.
- Cook the fritters for approximately 5-6 minutes on the first side until the edges are set and the undersides are golden brown.
- Flip each fritter carefully and cook for a further 4-5 minutes until cooked through and golden on both sides.
- Transfer the fritters to a plate lined with paper towels to drain briefly, then serve warm.
