Ingredients

  • 200 g zucchini
  • 80 g walnut cheese
  • 4 pieces eggs
  • 1 tbsp dill
  • 1 small scallions

Method

  1. Grate the zucchini coarsely, then squeeze out as much moisture as possible using a clean kitchen towel or your hands.
  2. In a large mixing bowl, combine the grated zucchini, crumbled walnut cheese, eggs, chopped dill, and finely sliced scallions, stirring until a cohesive batter forms.
  3. Heat a non-stick skillet over medium heat and lightly grease the surface, then drop heaped spoonfuls of the batter into the pan, gently flattening each fritter.
  4. Cook the fritters for approximately 5-6 minutes on the first side until the edges are set and the undersides are golden brown.
  5. Flip each fritter carefully and cook for a further 4-5 minutes until cooked through and golden on both sides.
  6. Transfer the fritters to a plate lined with paper towels to drain briefly, then serve warm.
