Ingredients
- 30 g walnuts
- 2 pieces pepper paste
- 2 medium tomato paste
- 300 g cauliflower
- 1 tsp smoky pepper flakes
Method
- Pulse the walnuts in a food processor until they form a coarse, crumbly meal resembling bulgur texture.
- Add the cauliflower to the food processor and pulse until it breaks down into fine, grain-like pieces similar to the walnuts.
- Transfer the walnut and cauliflower mixture to a large mixing bowl, then add the pepper paste, tomato paste, and smoky pepper flakes.
- Knead the mixture firmly by hand for 4 to 5 minutes until all ingredients are fully incorporated and the mixture holds together when pressed.
- Shape small portions of the mixture into elongated oval meatball forms using your palms, pressing firmly to compact each piece.
- Arrange the shaped pieces on a serving plate and allow them to rest for 2 to 3 minutes so the flavors meld together before serving.
