Ingredients

  • 30 g walnuts
  • 2 pieces pepper paste
  • 2 medium tomato paste
  • 300 g cauliflower
  • 1 tsp smoky pepper flakes

Method

  1. Pulse the walnuts in a food processor until they form a coarse, crumbly meal resembling bulgur texture.
  2. Add the cauliflower to the food processor and pulse until it breaks down into fine, grain-like pieces similar to the walnuts.
  3. Transfer the walnut and cauliflower mixture to a large mixing bowl, then add the pepper paste, tomato paste, and smoky pepper flakes.
  4. Knead the mixture firmly by hand for 4 to 5 minutes until all ingredients are fully incorporated and the mixture holds together when pressed.
  5. Shape small portions of the mixture into elongated oval meatball forms using your palms, pressing firmly to compact each piece.
  6. Arrange the shaped pieces on a serving plate and allow them to rest for 2 to 3 minutes so the flavors meld together before serving.
