Ingredients
- 300 g beef liver
- 1 small onion
- 1 tsp sumac
- 1 tbsp parsley
- 2 pieces red pepper flakes
- 2 tbsp olive oil
Method
- Pat the beef liver dry with paper towels and cut into 1-inch thick slices, then season both sides generously with sumac and red pepper flakes.
- Heat a grill or grill pan over medium-high heat for 3-4 minutes until very hot, then lightly brush the grates with olive oil.
- Place the liver slices on the hot grill and cook for 4-5 minutes on the first side without moving them, until a golden crust forms.
- Flip the liver slices and grill for another 3-4 minutes on the second side until cooked through but still slightly pink in the center.
- Transfer the grilled liver to a serving plate and drizzle with the remaining olive oil while still hot.
- Garnish the liver with fresh chopped parsley and serve immediately while still warm.
