Ingredients
- 150 g duck
- 1 piece cucumber
- 1 small scallions
- 1 tbsp sesame seeds
- 2 tbsp soy sauce
- 2 pieces pepper
Method
- Heat a dry skillet over high heat and sear the 150 g of duck skin-side down for 6 minutes until the skin renders and turns deep golden and crispy.
- Flip the duck and cook for a further 3 minutes, then transfer to a cutting board and let it rest for 2 minutes before slicing thinly.
- While the duck rests, slice the cucumber and pepper into thin strips and trim the scallions into fine diagonal cuts.
- Arrange the cucumber, pepper, and scallions in a wide salad bowl as the base of the dish.
- Lay the sliced crispy duck over the vegetables and drizzle the 2 tbsp of soy sauce evenly across the entire salad.
- Finish by scattering the 1 tbsp of sesame seeds over the top and toss gently at the table before serving.
