Ingredients

  • 150 g duck
  • 1 piece cucumber
  • 1 small scallions
  • 1 tbsp sesame seeds
  • 2 tbsp soy sauce
  • 2 pieces pepper

Method

  1. Heat a dry skillet over high heat and sear the 150 g of duck skin-side down for 6 minutes until the skin renders and turns deep golden and crispy.
  2. Flip the duck and cook for a further 3 minutes, then transfer to a cutting board and let it rest for 2 minutes before slicing thinly.
  3. While the duck rests, slice the cucumber and pepper into thin strips and trim the scallions into fine diagonal cuts.
  4. Arrange the cucumber, pepper, and scallions in a wide salad bowl as the base of the dish.
  5. Lay the sliced crispy duck over the vegetables and drizzle the 2 tbsp of soy sauce evenly across the entire salad.
  6. Finish by scattering the 1 tbsp of sesame seeds over the top and toss gently at the table before serving.
