Ingredients

  • 300 g ground pork
  • 200 g zucchini noodles
  • 2 pieces sichuan pepper
  • 1 tbsp sesame paste

Method

  1. Heat a wok or large skillet over high heat and toast the Sichuan pepper pieces for about 1 minute until fragrant, then remove and crush them coarsely.
  2. In the same wok over high heat, add the ground pork and stir-fry for 10-12 minutes, breaking it apart continuously until fully browned and slightly crispy.
  3. Reduce the heat to medium and stir in the sesame paste, coating the ground pork evenly and cooking for a further 2-3 minutes until the paste is fragrant and well combined.
  4. In a separate pan over medium-high heat, stir-fry the zucchini noodles for 4-5 minutes until just tender but still slightly firm to retain their texture.
  5. Divide the zucchini noodles among four bowls, top each with the sesame pork mixture, and finish with the crushed Sichuan pepper.
