Ingredients
- 300 g sea bass
- 2 medium tomato
- 2 pieces pepper
- 1 small onion
- 1 tbsp parsley
- 2 tbsp olive oil
- 1 (juiced) lemon
Method
- Preheat the oven to 200°C (400°F) and lightly grease a baking dish with a drizzle of the olive oil.
- Score the sea bass with shallow diagonal cuts on both sides, then rub it thoroughly with the remaining olive oil and fresh lemon juice.
- Slice the tomatoes and peppers into even rounds and arrange half of them in a single layer across the base of the prepared baking dish.
- Lay the sea bass on top of the vegetables, then layer the remaining tomato and pepper slices over and around the fish.
- Scatter the chopped parsley evenly over the dish and place it in the preheated oven.
- Bake for 15 minutes, or until the sea bass flesh is opaque and flakes easily when tested with a fork.
- Remove from the oven and finish with an extra squeeze of lemon juice before serving directly from the baking dish.
