Ingredients

  • 300 g sea bass
  • 2 medium tomato
  • 2 pieces pepper
  • 1 small onion
  • 1 tbsp parsley
  • 2 tbsp olive oil
  • 1 (juiced) lemon

Method

  1. Preheat the oven to 200°C (400°F) and lightly grease a baking dish with a drizzle of the olive oil.
  2. Score the sea bass with shallow diagonal cuts on both sides, then rub it thoroughly with the remaining olive oil and fresh lemon juice.
  3. Slice the tomatoes and peppers into even rounds and arrange half of them in a single layer across the base of the prepared baking dish.
  4. Lay the sea bass on top of the vegetables, then layer the remaining tomato and pepper slices over and around the fish.
  5. Scatter the chopped parsley evenly over the dish and place it in the preheated oven.
  6. Bake for 15 minutes, or until the sea bass flesh is opaque and flakes easily when tested with a fork.
  7. Remove from the oven and finish with an extra squeeze of lemon juice before serving directly from the baking dish.
