Ingredients

  • 100 g cured beef
  • 60 g mozzarella
  • 2 pieces pepper
  • 30 g almond flour pastry
  • 4 pieces eggs

Method

  1. Preheat the oven to 200°C (390°F) and line a small baking tray with parchment paper.
  2. Whisk the 4 eggs in a bowl until smooth, then combine with the almond flour pastry to form a cohesive dough.
  3. Divide the dough into equal portions, flatten each into a thin round, and layer slices of cured beef and mozzarella in the center of each portion.
  4. Season each filled portion with pepper, then fold and roll the dough tightly around the filling to form compact rolls.
  5. Place the rolls seam-side down on the prepared tray and bake in the preheated oven for 4 minutes until the almond flour pastry is set and the mozzarella has melted inside.
  6. Remove the rolls from the oven and allow them to rest for 2 minutes before serving to let the melted mozzarella firm slightly.
