Ingredients

  • 200 g shrimp
  • 3 cloves garlic
  • 2 tbsp butter
  • 2 medium tomato
  • 2 pieces pepper
  • 1 tbsp parsley

Method

  1. Preheat the oven to 200°C (390°F) and allow it to fully heat while you prepare the ingredients.
  2. Mince the 3 cloves of garlic and dice the 2 medium tomatoes and 2 pieces of pepper into small, even pieces.
  3. In an oven-safe dish, melt the 2 tbsp of butter, then add the minced garlic, diced tomatoes, and diced pepper, spreading them evenly across the base.
  4. Arrange the 200 g of shrimp over the vegetable and butter mixture in a single layer, ensuring even coverage.
  5. Transfer the dish to the preheated oven and bake for 36 minutes, or until the shrimp are fully cooked through and the sauce is bubbling.
  6. Remove the dish from the oven and finish with a scattering of the 1 tbsp of freshly chopped parsley before serving hot.
