Ingredients
- 200 g shrimp
- 3 cloves garlic
- 2 tbsp butter
- 2 medium tomato
- 2 pieces pepper
- 1 tbsp parsley
Method
- Preheat the oven to 200°C (390°F) and allow it to fully heat while you prepare the ingredients.
- Mince the 3 cloves of garlic and dice the 2 medium tomatoes and 2 pieces of pepper into small, even pieces.
- In an oven-safe dish, melt the 2 tbsp of butter, then add the minced garlic, diced tomatoes, and diced pepper, spreading them evenly across the base.
- Arrange the 200 g of shrimp over the vegetable and butter mixture in a single layer, ensuring even coverage.
- Transfer the dish to the preheated oven and bake for 36 minutes, or until the shrimp are fully cooked through and the sauce is bubbling.
- Remove the dish from the oven and finish with a scattering of the 1 tbsp of freshly chopped parsley before serving hot.
