- 2 tbsp soy sauce
- 300 g cauliflower rice
- 1 tsp ginger
Method
- Slice the beef into thin strips and set aside while you prepare the remaining ingredients.
- In a wide skillet over medium-high heat, combine the soy sauce, ginger, and a splash of water, bringing the mixture to a gentle simmer for about 2 minutes until fragrant.
- Add the sliced onion to the skillet and cook for 5 minutes, stirring occasionally, until softened and beginning to absorb the seasoned liquid.
- Add the beef strips to the skillet and cook for 8-10 minutes over medium heat, turning occasionally, until the beef is fully cooked through and coated in the savory sauce.
- Meanwhile, in a separate pan over medium heat, cook the cauliflower rice for 5-7 minutes, stirring frequently, until tender and any excess moisture has evaporated.
- Divide the cauliflower rice evenly among four bowls and spoon the beef and sauce generously over the top before serving.
