Ingredients

  • 300 g beef
  • 1 small onion
  • 2 tbsp soy sauce
  • 300 g cauliflower rice
  • 1 tsp ginger

Method

  1. Slice the beef into thin strips and set aside while you prepare the remaining ingredients.
  2. In a wide skillet over medium-high heat, combine the soy sauce, ginger, and a splash of water, bringing the mixture to a gentle simmer for about 2 minutes until fragrant.
  3. Add the sliced onion to the skillet and cook for 5 minutes, stirring occasionally, until softened and beginning to absorb the seasoned liquid.
  4. Add the beef strips to the skillet and cook for 8-10 minutes over medium heat, turning occasionally, until the beef is fully cooked through and coated in the savory sauce.
  5. Meanwhile, in a separate pan over medium heat, cook the cauliflower rice for 5-7 minutes, stirring frequently, until tender and any excess moisture has evaporated.
  6. Divide the cauliflower rice evenly among four bowls and spoon the beef and sauce generously over the top before serving.
