  • 300 g lamb offal
  • 1 small onion
  • 30 g almond flour
  • 1 tsp spices
  • 2 tbsp bone broth

Method

  1. Finely chop the lamb offal and place it in a large mixing bowl along with the diced onion, almond flour, spices, and bone broth, combining everything thoroughly until a cohesive mixture forms.
  2. Shape the mixture into a compact, rounded mass suitable for steaming or baking, pressing firmly so it holds together during cooking.
  3. Place the haggis mixture into a greased oven-safe dish or wrap it tightly in foil, then transfer it to an oven preheated to 180°C (350°F).
  4. Bake for approximately 32 minutes, checking halfway through to ensure the interior is cooking evenly and the outer surface is developing a firm, golden crust.
  5. Remove the haggis from the oven and allow it to rest for 5 minutes before slicing, so the juices redistribute and the texture firms up for serving.
