Method

  1. Cut the goat meat into bite-sized pieces and rub thoroughly with curry and allspice, allowing the spices to coat every surface evenly.
  2. Finely chop the scotch bonnet and mince the garlic cloves, then combine them with the spiced goat meat and let the mixture marinate for 15 minutes during prep time.
  3. Heat a heavy-bottomed pot over medium-high heat and sear the marinated goat meat for approximately 5 minutes until browned on all sides to develop a deep, authentic Caribbean base flavor.
  4. Add the scotch bonnet and garlic mixture directly into the pot with the browned meat, stirring to incorporate all aromatics evenly.
