Ingredients

  • 200 g zucchini
  • 300 g ground meat
  • 1 small onion
  • 2 medium tomato
  • 1 tbsp parsley
  • 1 tsp spices

Method

  1. Halve the zucchini lengthwise and scoop out the flesh with a spoon, creating boat-shaped shells, then set the scooped flesh aside.
  2. In a mixing bowl, combine the ground meat with the chopped onion, diced tomato, parsley, and spices, then mix thoroughly until the filling is evenly seasoned.
  3. Fill each zucchini shell generously with the meat mixture, pressing it in firmly so the filling is slightly mounded.
  4. Arrange the stuffed zucchini in a baking dish and scatter any remaining tomato pieces around them to create a light sauce base during cooking.
  5. Bake in a preheated oven at 200°C (390°F) for 21 minutes, until the meat is cooked through and the zucchini shells are tender.
  6. Remove from the oven and rest for 2 minutes, then garnish with the remaining fresh parsley before serving.
