Ingredients
- 200 g zucchini
- 300 g ground meat
- 1 small onion
- 2 medium tomato
- 1 tbsp parsley
- 1 tsp spices
Method
- Halve the zucchini lengthwise and scoop out the flesh with a spoon, creating boat-shaped shells, then set the scooped flesh aside.
- In a mixing bowl, combine the ground meat with the chopped onion, diced tomato, parsley, and spices, then mix thoroughly until the filling is evenly seasoned.
- Fill each zucchini shell generously with the meat mixture, pressing it in firmly so the filling is slightly mounded.
- Arrange the stuffed zucchini in a baking dish and scatter any remaining tomato pieces around them to create a light sauce base during cooking.
- Bake in a preheated oven at 200°C (390°F) for 21 minutes, until the meat is cooked through and the zucchini shells are tender.
- Remove from the oven and rest for 2 minutes, then garnish with the remaining fresh parsley before serving.
