  • 2 pieces roasted peppers

Method

  1. Season the lamb chops, chicken wings, and meatballs generously with salt and pepper, then allow them to rest at room temperature for 14 minutes before grilling.
  2. Preheat a charcoal or gas grill to high heat, ensuring the grates are clean and lightly oiled to prevent sticking.
  3. Place the lamb chops and meatballs on the hottest part of the grill, cooking the lamb chops for approximately 3-4 minutes per side until nicely charred and cooked to your preferred doneness.
  4. Grill the chicken wings over direct high heat, turning occasionally for even charring, until the skin is crispy and the meat is cooked through with no pink remaining.
  5. Halve the tomatoes and place them cut-side down on the grill alongside the roasted peppers to warm through and develop a light char.
