Ingredients

  • 2 stalks celery
  • 1 small onion
  • 3 cloves garlic
  • 100 ml heavy cream
  • 1 (juiced) lemon
  • 1 tbsp dill
  • 2 tbsp butter

Method

  1. Melt the butter in a medium saucepan over medium heat until it begins to foam, about 2 minutes.
  2. Add the celery stalks and sauté, stirring occasionally, for approximately 8 minutes until softened.
  3. Pour in enough water to cover the celery, bring to a boil, then reduce heat and simmer for 30 minutes until the celery is completely tender.
  4. Use an immersion blender to puree the soup directly in the pot until smooth and velvety.
  5. Stir in the heavy cream and lemon juice, then simmer gently for an additional 5 minutes over low heat.
  6. Ladle the soup into bowls and garnish with fresh dill before serving.
