Ingredients
- 2 stalks celery
- 1 small onion
- 3 cloves garlic
- 100 ml heavy cream
- 1 (juiced) lemon
- 1 tbsp dill
- 2 tbsp butter
Method
- Melt the butter in a medium saucepan over medium heat until it begins to foam, about 2 minutes.
- Add the celery stalks and sauté, stirring occasionally, for approximately 8 minutes until softened.
- Pour in enough water to cover the celery, bring to a boil, then reduce heat and simmer for 30 minutes until the celery is completely tender.
- Use an immersion blender to puree the soup directly in the pot until smooth and velvety.
- Stir in the heavy cream and lemon juice, then simmer gently for an additional 5 minutes over low heat.
- Ladle the soup into bowls and garnish with fresh dill before serving.
