Ingredients

  • 30 g almond flour
  • 4 pieces eggs
  • 60 g mozzarella
  • 1 tbsp sesame seeds
  • 2 tbsp olive oil
  • 30 g nigella seeds

Method

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper, then lightly brush it with olive oil.
  2. Melt the mozzarella in a microwave-safe bowl in 30-second intervals, stirring between each, until fully melted and smooth.
  3. In a mixing bowl, combine the melted mozzarella, almond flour, and eggs, then mix thoroughly with the remaining olive oil until a uniform dough forms.
  4. Fold in the nigella seeds, distributing them evenly throughout the dough.
  5. Divide the dough into 6 equal portions, shape each into a small round biscuit, and place them on the prepared baking sheet.
  6. Sprinkle the sesame seeds generously over the top of each biscuit before placing them in the oven.
  7. Bake for 28 to 31 minutes until the biscuits are golden brown and firm to the touch, then allow them to cool for 5 minutes before serving.
