- 300 g ground meat
- 1 small onion
- 1 tbsp parsley
- 1 tsp cumin
- 2 pieces red pepper flakes
- 60 g yogurt
Method
- Combine the ground meat, finely grated onion, chopped parsley, cumin, and red pepper flakes in a large bowl, kneading the mixture firmly by hand for 3 to 4 minutes until the ingredients are fully incorporated and the texture is cohesive.
- Cover the mixture and allow it to rest in the refrigerator for 20 minutes so the flavors meld together.
- Divide the seasoned meat mixture into equal portions and shape each one into elongated köfte-style meatballs approximately 2 cm thick.
- Preheat a grill or grill pan over medium-high heat and lightly oil the grates to prevent sticking.
- Place the meatballs on the hot grill and cook for 18 to 20 minutes, turning every 4 to 5 minutes, until all sides are evenly charred and the meat is cooked through.
- While the meatballs finish cooking, stir the yogurt until smooth and season it lightly with a pinch of red pepper flakes to create a simple Turkish-style dipping sauce.
- Transfer the grilled meatballs to a serving plate and serve immediately alongside the yogurt sauce.
