Ingredients

  • 300 g ground meat
  • 1 small onion
  • 1 tbsp parsley
  • 1 tsp cumin
  • 2 pieces red pepper flakes
  • 60 g yogurt

Method

  1. Combine the ground meat, finely grated onion, chopped parsley, cumin, and red pepper flakes in a large bowl, kneading the mixture firmly by hand for 3 to 4 minutes until the ingredients are fully incorporated and the texture is cohesive.
  2. Cover the mixture and allow it to rest in the refrigerator for 20 minutes so the flavors meld together.
  3. Divide the seasoned meat mixture into equal portions and shape each one into elongated köfte-style meatballs approximately 2 cm thick.
  4. Preheat a grill or grill pan over medium-high heat and lightly oil the grates to prevent sticking.
  5. Place the meatballs on the hot grill and cook for 18 to 20 minutes, turning every 4 to 5 minutes, until all sides are evenly charred and the meat is cooked through.
  6. While the meatballs finish cooking, stir the yogurt until smooth and season it lightly with a pinch of red pepper flakes to create a simple Turkish-style dipping sauce.
  7. Transfer the grilled meatballs to a serving plate and serve immediately alongside the yogurt sauce.
