Ingredients

  • 2 pieces roasted peppers
  • 300 g ground meat
  • 300 g cauliflower rice
  • 1 small onion
  • 1 tsp spices

Method

  1. Preheat the oven to 200°C (390°F) and prepare a small baking dish that will hold the roasted peppers upright during cooking.
  2. In a skillet over medium heat, cook the ground meat for 8-10 minutes, breaking it apart until browned and fully cooked through.
  3. Add the cauliflower rice, onion, and spices to the skillet with the ground meat, stirring well to combine, and cook for an additional 5 minutes until the cauliflower rice is tender.
  4. Carefully fill each roasted pepper with the meat and cauliflower rice mixture, pressing gently to pack the stuffing without tearing the peppers.
  5. Place the stuffed roasted peppers upright in the prepared baking dish and roast in the oven for 20 minutes until the peppers are heated through and the tops are lightly caramelized.
  6. Remove the stuffed roasted peppers from the oven and allow them to rest for 3-5 minutes before serving to let the filling settle.
