Ingredients

  • 300 g cauliflower couscous
  • 2 medium tomato paste
  • 2 tbsp pomegranate molasses
  • 1 tbsp parsley
  • 1 small scallions

Method

  1. Combine the cauliflower couscous with the tomato paste in a large mixing bowl.
  2. Add the pomegranate molasses to the bowl and stir thoroughly until all ingredients are well incorporated.
  3. Chop the parsley finely and dice the scallions, then fold them into the salad.
  4. Toss all ingredients together until evenly distributed and the cauliflower couscous is coated with the tomato paste and pomegranate molasses.
  5. Divide the salad between two serving bowls and serve immediately at room temperature.
