We made the traditional Turkish flavors keto-compatible. A wonderful recipe featuring cauliflower couscous tabbouleh and lettuce wraps.

Ingredients
- 300 g cauliflower couscous tabbouleh
- 1 cup lettuce wraps
- 2 tbsp pomegranate molasses
- 1 tbsp parsley
Method
- Spread the cauliflower couscous tabbouleh evenly onto a clean surface or large plate and let it rest for 5 minutes to allow any excess moisture to drain.
- Drizzle the pomegranate molasses over the cauliflower couscous tabbouleh and toss gently to coat all the grains evenly with the tangy sweetness.
- Sprinkle the parsley over the dressed tabbouleh mixture and fold it in lightly to distribute the herb throughout.
- Lay the lettuce wraps flat on a serving surface, spooning an equal portion of the tabbouleh mixture into the center of each leaf across 3 servings.
- Fold the sides of each lettuce wrap inward and roll firmly from the base to enclose the filling, securing the wrap before serving.
