Ingredients

  • 300 g cauliflower couscous tabbouleh
  • 1 cup lettuce wraps
  • 2 tbsp pomegranate molasses
  • 1 tbsp parsley

Method

  1. Spread the cauliflower couscous tabbouleh evenly onto a clean surface or large plate and let it rest for 5 minutes to allow any excess moisture to drain.
  2. Drizzle the pomegranate molasses over the cauliflower couscous tabbouleh and toss gently to coat all the grains evenly with the tangy sweetness.
  3. Sprinkle the parsley over the dressed tabbouleh mixture and fold it in lightly to distribute the herb throughout.
  4. Lay the lettuce wraps flat on a serving surface, spooning an equal portion of the tabbouleh mixture into the center of each leaf across 3 servings.
  5. Fold the sides of each lettuce wrap inward and roll firmly from the base to enclose the filling, securing the wrap before serving.
