Ingredients

  • 300 g lamb cubes
  • 1 medium eggplant
  • 2 pieces pepper
  • 2 medium tomato
  • 3 cloves garlic
  • 2 tbsp butter

Method

  1. Preheat the oven to 200°C (390°F) and mince the garlic cloves finely.
  2. Cut the eggplant into bite-sized cubes, slice the peppers into thick strips, and halve the tomatoes, then arrange all the vegetables in a single layer in a large baking dish.
  3. Nestle the lamb cubes evenly among the vegetables in the baking dish.
  4. Dot the butter in small pieces over the lamb and vegetables to ensure rich, even basting during cooking.
  5. Transfer the baking dish to the preheated oven and bake for 23 minutes, or until the lamb is cooked through and the vegetables are tender and slightly caramelized at the edges.
  6. Remove from the oven and let the dish rest for 3 minutes before serving to allow the juices to redistribute.
