Ingredients

  • 300 g lamb
  • 1 small onion
  • 50 g carrots
  • 3 cloves garlic
  • 2 leaves bay leaf
  • 1 (juiced) lemon
  • 2 pieces black pepper

Method

  1. Place the 300 g of lamb in a pot and cover with cold water, then bring to a boil over high heat and skim off any foam that rises to the surface.
  2. Add the small onion, 50 g of carrots, 3 cloves of garlic, 2 bay leaves, and 2 pieces of black pepper to the pot.
  3. Reduce the heat to medium-low and simmer the lamb with all the aromatics for 24 minutes until the meat is tender and cooked through.
  4. Remove the lamb from the pot and discard the bay leaves, then arrange the meat on a serving platter alongside the cooked carrots.
  5. Squeeze the juice of 1 lemon over the lamb just before serving to brighten the flavors and finish the dish.
