Ingredients
- 300 g lamb
- 1 small onion
- 50 g carrots
- 3 cloves garlic
- 2 leaves bay leaf
- 1 (juiced) lemon
- 2 pieces black pepper
Method
- Place the 300 g of lamb in a pot and cover with cold water, then bring to a boil over high heat and skim off any foam that rises to the surface.
- Add the small onion, 50 g of carrots, 3 cloves of garlic, 2 bay leaves, and 2 pieces of black pepper to the pot.
- Reduce the heat to medium-low and simmer the lamb with all the aromatics for 24 minutes until the meat is tender and cooked through.
- Remove the lamb from the pot and discard the bay leaves, then arrange the meat on a serving platter alongside the cooked carrots.
- Squeeze the juice of 1 lemon over the lamb just before serving to brighten the flavors and finish the dish.
