Ingredients
- 300 g lamb shank
- 3 cloves garlic
- 2 pieces rosemary
- 2 medium tomato
- 1 small onion
- 2 tbsp olive oil
Method
- Preheat the oven to 200°C (400°F) to ensure it reaches the correct temperature before the lamb goes in.
- Rub the lamb shank thoroughly with olive oil and press the garlic cloves into slits cut across the meat to infuse deep flavor in the Turkish style.
- Place the lamb shank in a roasting pan, arrange the tomatoes and onion around it, and tuck the rosemary pieces alongside the meat.
- Cover the roasting pan tightly with foil and place it in the preheated oven for 30 minutes to begin slow-roasting the lamb.
- Remove the foil and continue roasting for a further 11 minutes until the lamb shank develops a golden, caramelized exterior.
- Rest the lamb shank for 5 minutes before serving alongside the roasted tomatoes and onion from the pan.
