Ingredients

  • 300 g lamb shank
  • 3 cloves garlic
  • 2 pieces rosemary
  • 2 medium tomato
  • 1 small onion
  • 2 tbsp olive oil

Method

  1. Preheat the oven to 200°C (400°F) to ensure it reaches the correct temperature before the lamb goes in.
  2. Rub the lamb shank thoroughly with olive oil and press the garlic cloves into slits cut across the meat to infuse deep flavor in the Turkish style.
  3. Place the lamb shank in a roasting pan, arrange the tomatoes and onion around it, and tuck the rosemary pieces alongside the meat.
  4. Cover the roasting pan tightly with foil and place it in the preheated oven for 30 minutes to begin slow-roasting the lamb.
  5. Remove the foil and continue roasting for a further 11 minutes until the lamb shank develops a golden, caramelized exterior.
  6. Rest the lamb shank for 5 minutes before serving alongside the roasted tomatoes and onion from the pan.
