Ingredients

  • 200 g sauerkraut
  • 50 g carrots
  • 1 small onion
  • 2 tbsp olive oil
  • 1 tbsp parsley

Method

  1. Drain the sauerkraut thoroughly and place it into a large mixing bowl.
  2. Peel and grate the carrots, then add them to the bowl with the sauerkraut.
  3. Finely chop the fresh parsley and scatter it over the sauerkraut and carrot mixture.
  4. Drizzle the olive oil evenly over the salad and toss all ingredients together until well combined.
  5. Allow the salad to rest at room temperature for 15 minutes so the flavors meld before serving.
