Ingredients

  • 150 g mushrooms
  • 100 ml heavy cream
  • 1 small onion
  • 3 cloves garlic
  • 2 tbsp butter
  • 1 tsp thyme

Method

  1. Clean the mushrooms and slice them into uniform pieces.
  2. Melt the butter in a large pot over medium heat.
  3. Add the sliced mushrooms to the pot and sauté for 5 minutes until they release their moisture and begin to brown.
  4. Pour in enough water to cover the mushrooms by about 2 inches, then add the thyme and simmer for 8 minutes.
  5. Stir in the heavy cream and continue simmering for 3 minutes until the soup reaches a creamy consistency.
  6. Season the soup to taste and serve hot.
