Ingredients

  • 50 g green lentils (small portion)
  • 300 g cauliflower rice
  • 1 small onion
  • 2 tbsp butter
  • 1 tbsp mint

Method

  1. Bring a pot of water to a boil and add the green lentils, cooking for 18-20 minutes until tender but still holding their shape.
  2. While the lentils cook, melt the butter in a large skillet over medium-high heat.
  3. Add the cauliflower rice to the skillet and sauté for 5-7 minutes, stirring frequently, until it becomes tender and slightly golden.
  4. Drain the cooked lentils and fold them into the cauliflower rice, stirring gently to combine.
  5. Remove from heat and stir in the fresh mint, distributing it evenly throughout the dish.
  6. Divide the mixture between two serving bowls and serve warm.
