Ingredients
- 50 g green lentils (small portion)
- 300 g cauliflower rice
- 1 small onion
- 2 tbsp butter
- 1 tbsp mint
Method
- Bring a pot of water to a boil and add the green lentils, cooking for 18-20 minutes until tender but still holding their shape.
- While the lentils cook, melt the butter in a large skillet over medium-high heat.
- Add the cauliflower rice to the skillet and sauté for 5-7 minutes, stirring frequently, until it becomes tender and slightly golden.
- Drain the cooked lentils and fold them into the cauliflower rice, stirring gently to combine.
- Remove from heat and stir in the fresh mint, distributing it evenly throughout the dish.
- Divide the mixture between two serving bowls and serve warm.
