Ingredients
- 300 g meatballs
- 50 g green lentils (small portion)
- 2 medium tomato
- 2 pieces pepper
- 1 tbsp mint
- 1 (juiced) lemon
Method
- Bring a large pot of water to a boil and add the green lentils, cooking for 10 minutes until they begin to soften.
- While the lentils cook, dice the tomatoes and peppers into small pieces.
- Add the meatballs to the pot with the lentils and simmer together for 12 minutes until the meatballs are cooked through.
- Stir in the diced tomatoes and peppers, then simmer for 3 additional minutes to warm the vegetables.
- Remove from heat and finish the soup with the fresh mint and lemon juice, stirring gently to combine.
- Taste and adjust seasoning as needed, then ladle into bowls and serve immediately.
