Ingredients

  • 300 g meatballs
  • 50 g green lentils (small portion)
  • 2 medium tomato
  • 2 pieces pepper
  • 1 tbsp mint
  • 1 (juiced) lemon

Method

  1. Bring a large pot of water to a boil and add the green lentils, cooking for 10 minutes until they begin to soften.
  2. While the lentils cook, dice the tomatoes and peppers into small pieces.
  3. Add the meatballs to the pot with the lentils and simmer together for 12 minutes until the meatballs are cooked through.
  4. Stir in the diced tomatoes and peppers, then simmer for 3 additional minutes to warm the vegetables.
  5. Remove from heat and finish the soup with the fresh mint and lemon juice, stirring gently to combine.
  6. Taste and adjust seasoning as needed, then ladle into bowls and serve immediately.
