Ingredients
- 150 g lamb kebab
- 1 cup arugula
- 2 pieces roasted peppers
- 1 small onion
- 1 tsp sumac
- 2 tbsp pomegranate molasses
Method
- Preheat a grill or griddle pan over high heat until very hot, which should take about 2 minutes.
- Season the lamb kebab with sumac, pressing the spice into the meat, then grill for 3 minutes per side until charred on the outside and cooked through.
- While the lamb rests for 2 minutes off the heat, slice the roasted peppers into thin strips.
- Arrange the arugula on a serving plate and top with the sliced roasted peppers.
- Slice the rested lamb kebab into bite-sized pieces and lay them over the arugula and peppers.
- Drizzle the pomegranate molasses evenly over the assembled salad just before serving.
