Ingredients

  • 150 g lamb kebab
  • 1 cup arugula
  • 2 pieces roasted peppers
  • 1 small onion
  • 1 tsp sumac
  • 2 tbsp pomegranate molasses

Method

  1. Preheat a grill or griddle pan over high heat until very hot, which should take about 2 minutes.
  2. Season the lamb kebab with sumac, pressing the spice into the meat, then grill for 3 minutes per side until charred on the outside and cooked through.
  3. While the lamb rests for 2 minutes off the heat, slice the roasted peppers into thin strips.
  4. Arrange the arugula on a serving plate and top with the sliced roasted peppers.
  5. Slice the rested lamb kebab into bite-sized pieces and lay them over the arugula and peppers.
  6. Drizzle the pomegranate molasses evenly over the assembled salad just before serving.
