Ingredients

  • 1 medium eggplant
  • 3 cloves garlic yogurt
  • 2 tbsp olive oil
  • 2 pieces red pepper flakes
  • 1 tbsp mint

Method

  1. Pierce the eggplant all over with a fork, then char it directly over a gas flame or under a broiler, turning occasionally, until the skin is completely blackened and the flesh is tender, about 8 minutes total.
  2. Transfer the charred eggplant to a colander, slit it open lengthwise, and allow it to drain and cool for several minutes so excess liquid drips away.
  3. Peel away and discard all the blackened skin, then place the soft, smoky flesh in a serving bowl and break it apart gently with a fork.
  4. Spoon the garlic yogurt generously over the eggplant, then drizzle the olive oil across the top.
  5. Finish the dish by scattering the red pepper flakes and fresh mint over the surface before serving at room temperature.
