Ingredients
- 1 medium eggplant
- 3 cloves garlic yogurt
- 2 tbsp olive oil
- 2 pieces red pepper flakes
- 1 tbsp mint
Method
- Pierce the eggplant all over with a fork, then char it directly over a gas flame or under a broiler, turning occasionally, until the skin is completely blackened and the flesh is tender, about 8 minutes total.
- Transfer the charred eggplant to a colander, slit it open lengthwise, and allow it to drain and cool for several minutes so excess liquid drips away.
- Peel away and discard all the blackened skin, then place the soft, smoky flesh in a serving bowl and break it apart gently with a fork.
- Spoon the garlic yogurt generously over the eggplant, then drizzle the olive oil across the top.
- Finish the dish by scattering the red pepper flakes and fresh mint over the surface before serving at room temperature.
