Ingredients
- 30 g almond flour dough
- 60 g mozzarella
- 80 g white cheese
- 4 pieces eggs
- 1 tbsp parsley
Method
- Preheat the oven to 200°C (390°F) and line a baking tray with parchment paper.
- Press the 30 g of almond flour dough into three flat, oval bases directly onto the prepared tray, shaping each to roughly 5 mm thickness.
- Crumble 80 g of white cheese evenly over each dough base, then distribute 60 g of mozzarella on top.
- Create a small well in the center of each flatbread and crack one egg into each well, reserving the fourth egg to brush around the edges of the dough as a wash.
- Bake in the preheated oven for 18–20 minutes, until the egg whites are just set, the yolks remain slightly soft, and the edges of the dough are golden.
- Remove from the oven and scatter 1 tbsp of freshly chopped parsley over the flatbreads before serving immediately.
