Ingredients

  • 30 g almond flour pastry
  • 80 g white cheese
  • 4 pieces eggs
  • 2 tbsp butter
  • 1 tbsp parsley

Method

  1. Preheat the oven to 180°C (356°F) and grease a small baking dish with 1 tablespoon of butter.
  2. Crumble the white cheese into a bowl, mix in the chopped parsley, and set the filling aside.
  3. Layer the almond flour pastry sheets into the greased baking dish, spreading the white cheese and parsley mixture evenly between each layer.
  4. Whisk the 4 eggs together with the remaining 1 tablespoon of melted butter and pour the mixture evenly over the layered pastry.
  5. Allow the pastry to soak for 5 minutes so the egg mixture is fully absorbed into the layers before placing it in the oven.
  6. Bake in the preheated oven for 23 minutes until the top is golden and the egg custard is fully set.
  7. Remove from the oven, allow to rest for 5 minutes before slicing into 3 portions and serving warm.
