Ingredients

  • 30 g almond flour pastry
  • 80 g white cheese
  • 60 g mozzarella
  • 4 pieces eggs
  • 2 tbsp butter

Method

  1. Preheat the oven to 180°C (356°F) and grease a small baking tray with 1 tablespoon of butter.
  2. In a mixing bowl, combine the almond flour pastry with 2 of the eggs and mix until a smooth, pliable dough forms, then press it evenly across the base of the prepared tray.
  3. Crumble the white cheese evenly over the almond flour pastry base, then scatter the shredded mozzarella on top to create a layered cheese filling.
  4. Make two small wells in the cheese layer and crack the remaining 2 eggs directly into the wells, then dot the remaining tablespoon of butter over the surface.
  5. Place the tray in the preheated oven and bake for 35 to 37 minutes until the pastry is golden, the cheese is bubbling, and the eggs are set to your liking.
  6. Remove from the oven and allow the tray pastry to rest for 2 to 3 minutes before slicing and serving warm.
