Ingredients
- 300 g lamb chops
- 1 tsp thyme
- 3 cloves garlic
- 2 tbsp olive oil
- 2 pieces roasted peppers
Method
- Combine olive oil, minced garlic, and thyme in a bowl, then coat the lamb chops thoroughly with the marinade and let them rest for 10 minutes at room temperature.
- Preheat a grill or grill pan over high heat until it reaches a very high temperature, about 230°C (450°F).
- Place the marinated lamb chops on the hot grill and cook for approximately 8-10 minutes per side, achieving characteristic grill marks and a nicely charred crust.
- While the lamb chops are grilling, warm the roasted peppers on the edge of the grill for 3-4 minutes until heated through.
- Remove the lamb chops from the grill and allow them to rest for 5 minutes before serving alongside the warm roasted peppers.
