Ingredients

  • 50 g leeks
  • 50 g carrots
  • 300 g ground meat
  • 2 medium tomato paste
  • 2 tbsp olive oil

Method

  1. Wash and slice the leeks into 1/4-inch rounds, then trim and peel the carrots and cut them into thin matchsticks.
  2. Heat the olive oil in a large skillet over medium-high heat and add the ground meat, breaking it apart with a spoon and cooking for 5-7 minutes until browned.
  3. Add the sliced leeks and carrot matchsticks to the skillet, stirring to combine with the cooked meat and cooking for 8-10 minutes until the vegetables begin to soften.
  4. Stir in the tomato paste, mixing it thoroughly throughout the meat and vegetable mixture, and continue cooking for 6-8 minutes until the leeks are tender and the flavors meld.
  5. Taste and adjust seasoning as desired, then divide between two plates and serve warm.
