Ingredients

  • 100 g beef tongue
  • 50 g carrots
  • 1 small onion
  • 3 cloves garlic
  • 2 leaves bay leaf
  • 1 (juiced) lemon sauce

Method

  1. Place the beef tongue in a large pot, cover with cold water, and bring to a boil over high heat.
  2. Skim any foam from the surface, then add the carrots and bay leaves to the pot.
  3. Reduce the heat to a steady simmer and cook the tongue for 24 minutes until tender.
  4. Remove the beef tongue from the pot, allow it to cool slightly, then peel away the outer skin.
  5. Slice the tongue into even pieces and arrange on a serving plate alongside the cooked carrots.
  6. Drizzle the lemon sauce generously over the sliced tongue and carrots before serving.
