- 100 g beef tongue
- 50 g carrots
- 1 small onion
- 3 cloves garlic
- 2 leaves bay leaf
- 1 (juiced) lemon sauce
Method
- Place the beef tongue in a large pot, cover with cold water, and bring to a boil over high heat.
- Skim any foam from the surface, then add the carrots and bay leaves to the pot.
- Reduce the heat to a steady simmer and cook the tongue for 24 minutes until tender.
- Remove the beef tongue from the pot, allow it to cool slightly, then peel away the outer skin.
- Slice the tongue into even pieces and arrange on a serving plate alongside the cooked carrots.
- Drizzle the lemon sauce generously over the sliced tongue and carrots before serving.
