Ingredients
- 300 g lamb intestines
- 300 g cauliflower rice
- 1 tsp spices
- 2 tbsp butter
Method
- Thoroughly rinse the lamb intestines under cold running water and pat them dry with paper towels to prepare them for stuffing.
- Melt 1 tablespoon of butter in a pan over medium heat for about 3 minutes, then add the cauliflower rice and spices, stirring and cooking for approximately 8 minutes until the rice is tender and fragrant.
- Remove the cauliflower rice mixture from the heat and allow it to cool for 5 minutes, then carefully stuff the lamb intestines with the mixture, leaving a small gap at each end to allow for expansion during cooking.
- Tie off both ends of each stuffed intestine securely with kitchen twine to seal the filling inside.
- Melt the remaining 1 tablespoon of butter in a large oven-safe pan over medium-high heat and sear the stuffed intestines for approximately 5 minutes, turning occasionally until evenly browned on all sides.
- Transfer the pan to an oven preheated to 180°C and roast the stuffed intestines for 20 minutes until fully cooked through and the casing is firm and golden.
- Remove from the oven and allow to rest for 5 minutes before slicing and serving.
