Ingredients

  • 300 g lamb intestines
  • 300 g cauliflower rice
  • 1 tsp spices
  • 2 tbsp butter

Method

  1. Thoroughly rinse the lamb intestines under cold running water and pat them dry with paper towels to prepare them for stuffing.
  2. Melt 1 tablespoon of butter in a pan over medium heat for about 3 minutes, then add the cauliflower rice and spices, stirring and cooking for approximately 8 minutes until the rice is tender and fragrant.
  3. Remove the cauliflower rice mixture from the heat and allow it to cool for 5 minutes, then carefully stuff the lamb intestines with the mixture, leaving a small gap at each end to allow for expansion during cooking.
  4. Tie off both ends of each stuffed intestine securely with kitchen twine to seal the filling inside.
  5. Melt the remaining 1 tablespoon of butter in a large oven-safe pan over medium-high heat and sear the stuffed intestines for approximately 5 minutes, turning occasionally until evenly browned on all sides.
  6. Transfer the pan to an oven preheated to 180°C and roast the stuffed intestines for 20 minutes until fully cooked through and the casing is firm and golden.
  7. Remove from the oven and allow to rest for 5 minutes before slicing and serving.
